Everywhere I look someone is posting their "clean eating" meals, and while they look intriguing and I'm willing to give some of them a try, you don't have to worry; I won't become one of those crazy OMG I'M A CLEAN EATER AND I'M GONNA SHOVE IT YOUR FACE people.
A lot of recipes I see involve mashing up bananas. One of the easiest said mix 2 bananas and 1 cup of quick oats, bake for 15 minutes, and BAM! You got yourself these delicious breakfast cookies.
So, I gave it a whirl. I actually did 3 bananas/1.5 cups of quick oats thinking that it wasn't enough with the original measurements. I also added in craisins and raisins from my tropical trail mix to add a little somethin-somethin.
Made some balls... and baked for 18 minutes.
BAM! Made!
I thought they needed just a little more flavor of some sort, so we did a little peanut butter dipping.
They were definitely good. I love the sweetness that you get after baking bananas.
When I make them again, I plan on adding some peanut butter into the mixture, and/or a little cinnamon. The Quick Oats didn't have any flavor to them, to cinnamon would give it that extra little kick, for sure.
Also, I only had about five of them and felt pretty full, which was cool. I saved the leftovers for the next day- but that's not a good idea. They turned black. Guh-ross.
love,
