7 waffle iron recipes to celebrate international waffle day

Happy International Waffle Day!

Do you have a waffle press? I got mine because it was $5 on Black Friday so.. duh.. that means it's a necessity. Unfortunately, I haven't used it for nearly as many things as Pinterest tells me to.

In an effort to celebrate and motivate me to use it more, here are some fun [/interesting] recipes I've found beyond the regular waffle.








There are a ton of other things, too... basically cook ANYTHING in there! Brownies/cookies... hash browns.. eggs... cinnamon rolls... Anything that can be baked can be thrown in your waffle iron for a couple minutes and come out magnificent.

It seems as though I'm going to have to invest in another one, though. Mine is a Belgian waffle maker and I don't see that ending well with some of these recipes.

food to try: tuna cakes

I'll never understand how someone could love canned tuna, but "hate seafood." To me, canned tuna is the fishiest of fishy, but to each his own.

When dealing with such people on a daily basis, you gotta get creative if you want some of the salty seas in your mouth. [hehe]

I found this recipe for tuna cakes and had to try them.

What ya need:
  • 2, 5 oz cans of canned tuna in water
  • 1/4 tbs of Old Bay [or more like a full tbs if you love Old Bay like me]
  • half of an onion- chopped
  • 2 egg whites
  • 1/4 cup of panko bread crumbs
  • 1/4 cup of Miracle Whip or mayo
  • 1 tsp chili powder
  • juice from one lime
What ya do: 
  1. Combine the drained tuna, Old Bay, onion, eggs, and bread crumbs in a bowl and mix well.
  2. Form into four burger-like patties [I use was paper to make it easier]
  3. Spray a skillet with cooking oil and cook over medium-high heat until browned on both sides. [I think it took about five minutes on each side.]
  4. In a smaller bowl, mix the mayo, chili powder and lime. Top the cakes with this "Chipotle Mayo"


Flipping them over in the pan was a lot harder than I anticipated and was a pain in the ass, but they were definitely really good. I also made a bunch of extra mayo to put on all sorts of other things.

It's almost like you're eating crab cakes.... but you're totally not. And they're almost as good, but equally impressive.
